Easy Enchiladas Recipe

After a particularly harried day yesterday I was starving and in need if Mexican, though I have an allergy to onions so ordering Mexican food is really a waste of time. So, as a stay at home mom with plenty of free time to think about and then cook a delicious dinner every night (RIGHT!), I made the quickest easy enchiladas ever last night. Here’s what you need:
1 package of Tortillas (corn or flour)
1 package of shredded cheddar cheese (or the Mexican mix of cheeses)
2 zucchinis (cut in small enough pieces to be rolled in to the tortilla)
1 large (or 2 small) cans of Enchilada sauce
1 package Trader Joe’s Chile Verde or a roast chicken
Sour cream
Since the meat is already cooked, just assemble. Cover them in tinfoil and bake in the oven at 350 for 30 minutes. Serve with sour cream. Easy enchiladas take only about 10-15 minutes max to assemble, including time for cutting and grating cheese if you can’t find or don’t like the pre-grated stuff. While it bakes I either give my daughter her bath or clean the kitchen or just sit down. There is not much sitting that happens during the course of my day.
