Sweet Potato Bites for Toddlers

I make these sweet potato bites for my little girl, who incidentally just scarfs them up, so I thought I’d share the recipe with those of you who have picky eaters…and those of you who don’t. These, for some reason, seem to please even the most discerning of baby palates.

It’s super simple. Buy a sweet potato, though I think it’s actually a yam I’m talking about…you know, the orange one. Peel it. Cut it in to small squares. Place it on a baking sheet with oil (not olive oil, just veggie oil) and sprinkle cinnamon on top. Bake for 15-20 minutes at 325 degrees (baking time will change depending on how large your chunks are). You’ll want the potatoes to be soft but not mushy. Let cool.

Watch your little one shove fistfulls of the squares in to his mouth! Enjoy.
